FAVORITE EASY RECIPES

Quick Easy and Delicious!
from the Kitchen of Rose Kingsley-Thomas, Ozark Sassy Lassies, Mountain View, Missouri
Toasted Coconut Custard Pie (no crust)
Preheat oven to 350º Spray a 9" Pie Pan with PAM
In electric blender combine:
- 2 cups Milk (I use 2%)
- 4 large eggs
- 3/4 cup Sugar
- 1/2 cup Biscuit Mix (like Bisquick)
- 1/4 cup Butter
- 2 teaspoons Vanilla
Cover and blend on low speed for 3 minutes.
Pour into 9" pie pan that has been sprayed with PAM
Let stand 5 minutes.
- Sprinkle the top with: 1 cup Flaked Coconut
Bake at 350 for 40 to 60 minutes, until coconut is toasted and inserted knife comes out clean
I have an electric oven, it takes a full hour to bake, when I had gas it only took 40 minutes. This is one of our favorite desserts, and its so easy to make.
